Discover, sample, experience the world of winemaking… and bring cheer to your life!

Treat yourself to a relaxing stroll through a vineyard, where we will discover what organic winemaking involves and the loving care and attention it requires: the biological control of pests, the role of insects, fertilisation by groundcover, indigenous yeasts… by the end you will appreciate why these wines can only be produced here! Depending on the time of year there are also tasks to be performed in the vineyard and we’ll be able to take part: fertilising and collecting leaves in autumn, pruning in winter and spring, harvesting and grape-mashing in summer… ours is the earliest harvest anywhere in Europe!

In the Montilla-Moriles Protected Designation of Origin we have a winemaking system that is unknown elsewhere in the world: the System of Criaderas and Soleras, found only in Andalusia, provides a delightful and time-honoured method of blending old and young wines in which the vintage and the wood of the barrel have little influence on the properties of the wine. Here the chief factors are the pedro ximénez grape, the limestone soil, known as albariza, and the local yeast, known as flor. Get ready to experience a profusion of sensations when you enter one of Cordoba’s bodegas for the first time and have a go at removing wine from barrels like the professionals using a traditional venencia, a steel cup attached to the end of a long flexible shaft.

Since the best way to appreciate the local wine is to accompany it with food typical of the region, we suggest partaking in an unforgettable tapas experience surrounded by wine casks while sampling Cordoba’s specialities: Iberian cured ham, salmorejo (a purée of bread and tomato) and flamenquin (pork loin in breadcrumbs) provide the perfect accompaniment to the local wines – scintillating finos, complex amontillados, velvety olorosos and the exotic pedro ximenéz. Winemaker and his wife will provide both liquid and solid refreshment… a combination that will ensure an experience that lives long in the memory!
